About Me

My photo
My husband and I have two children. One of each brand. Cailyn is 3 and William is almost 2. I spend my days cleaning up messes, playing dress-up, prince and princess, and hopefully doing my children a service by teaching them some manners and virtues.

Tuesday night dinner!

Can you guess what this is???

It's not an open wound or an oozing blister.

That's right! It's Tuesday night dinner!

It's one of Steven's favorite.

This recipe is one of the easiest that we make and it's extremely healthy for you as well! It's packed full of protein and great vitamins.
Start with boneless, skinless chicken breasts.
And then pound the chicken to even them out. You really have to get after it with the meat tenderizer or your rolling pen. Apologize to any neighbors and get going!
Lay one slice of ham (the sandwich kind!), and one slice of your favorite reduced-fat cheese on the chicken. We used Swiss which I don't like normally but when it's baked to perfection it is delicious.
Roll the chicken up, seal with a toothpick and lay in a lightly greased baking dish. (And by grease I man non-stick cooking spray.) Sprinkle breadcrumbs on top along with a little Mrs. Dash and bake for about 25 minutes at 375 degrees. We always steam up some broccoli and voila- dinner.

If you try it let me know what you think! Enjoy!
