Meatless Quesadilla

You read it everywhere that people are cutting back and one way to do that is to eat atleast one, if not two, vegetarian meals a week. For me this wouldn't be too difficult but with a weight lifting, protein pumping man in the house-er apartment- it's just not likely to happen. So this is something I make after Steven has had his meal and rests in a carb coma on the couch, too sluggish to even care to ask what I'm doing. I started with pepper, onions tomatoes and cheese! De-lish!








Note- This is an optical illusion. I only had half each of red and green bell peppers!)















Get a REALLY hot griddle with a little butter or oil and throw the sliced vegetables on it and let them sit to get a good sear. Seasonings I used were cumin, garlic salt and black pepper.















While the peppers and onions are cooking assemble the tortilla. I used about 1/2 Tbsp of light sour cream, 2 oz. of reduced fat monterey jack cheese and obviously tomato slices.
The sour cream is optional but I love the extra flavor it gives. You can use any cheeese you like also, but this is what I had and I don't like the grocery store so I used it.















When the veggies are done - they should look something like this - assemble them on half of the tortilla so you are able to fold it over, thus making a quesadilla!














Lay the tortilla on the same hot pan for about 5 minutes total. 2 1/2 minutes each side. Let it cook until the tortillas is golden brown and cheese is melted. Afterwards you will have a yummy, cheap, healthy dish that only takes a few minutes! If the tortilla burns and the cheese doesn't melt then the heat is too high.
P.S. If you have non-veggie lovers, you can use chicken and cheese only or try mushrooms for another low cost option! Like my husband says "Everything is better in a tortilla!"
