Steve's best friend called me last week with a request for the wedding. I asked him what his one request was and he responded by asking me to PUH-lease make twice baked potatoes. I made them once when Steve and I were first dating. (Oh it's been so long ago...) It was the first time I had been to Dallas for the OU/Texas game and we were watching the game at Miah's apartment. I was extremely bored after a whole day of football so I decided to make snacks for everyone just like a soccer mom would do. So I made some meaty queso, twice baked potatoes and my mom's famous hot wings. Miah has since met a woman who knows her way around the kitchen and wanted the recipe to help keep her man happy. And I'm all about keepin' my man happy so I had to help her out. Here is the recipe below. And it is extremely simple!
You will need the following:
baking potatoes
sour cream
milk
butter
seasoning salt
cheddar cheese
fried bacon or bacon bits
chives (fresh are better but dried will work)
First take your potatoes and place them directly on the rack in a 400 degree oven and bake them until they are soft. (Approx. 45 min.)
Remove the potatoes from the oven and while they are hot use a kitchen towel to hold them and slice the potatoes in half and scoop out the potato and place it into a mixing bowl. Do this with remaining potatoes.
Next add about 1/2-1/3 cup of milk, about 1/2 cup of sour cream and 1/4 cup of butter.
*This is all depending on how many potatoes you use. These measurements are for approximately 4 large baking potatoes.
The consistency should be lumpy mashed potatoes. Not runny at all.
After that add seasoning salt, salt and pepper to taste.
Add about 1/2 cup of cheddar cheese and blend well.
Add about 1 Tbsp of chives and mix well.
Scoop the potato mixture back into the potato skins and cover with more cheddar cheese and bacon bits and place back into the oven until cheese is melted and you're done!

These go great with sour cream or ranch dressing.
